Our tequila is made with 100% Blue Weber agave from the highlands and lowlands of Jalisco, harvested at 8 years. This is almost twice the industry standard. More time in the ground means more natural sugar, more complexity, and more depth in every bottle.
Agave hearts are slow-roasted for 56 hours in traditional brick hornos. Compared with the industry standard of 32 hours, our slower roast draws out the agave’s natural sweetness while preserving its character.
Cooked agave is pressed through a traditional stone tahona wheel, one of the oldest methods in tequila making. The tahona slowly extracts the pure agave juice, preserving every layer of flavor the plant spent 8 years developing.
No yeast is added. Because our agave is harvested at full maturity, fermentation happens naturally and is driven by the wild yeast that lives on the plant itself. Fermentation takes 60 to 72 hours, the way tequila was originally made.
Our tequila is twice distilled in pot stills for balance and character. Blanco is rested before bottling. Reposado is aged for 6 months, while our Añejo is aged for over a year. Both aged in former Kentucky bourbon barrels.
Every bottle is labeled by hand. Our tequila is small-batch from start to finish.
